Delicious Cooking: Healthy Chicken Breasts
Almost everyone loves chicken. It is actually a lot healthier than pork or beef. The healthiest part of the chicken is the breast. Although, it is not as quite as flavorful as the other chicken parts, but these recipes are sure to spice up your taste buds.
Grilled Lemon Chicken Breast
- A half cup of fresh lemon juice
- Two tablespoons of virgin olive oil
- Three garlic cloves, minced
- Seven pieces of chicken breast, boneless and skinless
- One teaspoon of sea salt
- One teaspoon of black pepper
What you need to do:
Open the grill and prepare it to medium-high heat. Combine the lemon juice, virgin olive oil, minced garlic and the chicken breast. Place it in a sealed plastic bag. Sprinkle it eventually in salt and pepper. Place the chicken on the grill and spray it with some cooking spray. Grill it evenly on both sides, around five to seven minutes on each side.
Chicken with Tomato and Cheese Salsa
- Eight cups of water
- Ten small pieces of small tomatoes
- Two garlic cloves
- One jalapeno pepper, sliced thinly
- One half cup of fresh cilantro
- One fourth cup of chopped onions
- One teaspoon of salt
- One teaspoon of fresh lemon juice
- Three slices of white bread
- Four pieces of chicken breast halves
- One half teaspoon of salt
- One half teaspoon of cumin
- One fourth teaspoon of red pepper
- One egg
- One tablespoon of olive oil
- One half cup of cheese
- Lemon wedges
What you need to do:
Make a salsa by heating the eight cups of water to a boil. Add the tomatoes, garlic and chile. Cook it for eight minutes. Turn off the heat and drain the water. Rinse the cold water. Combine the tomatoes, chili, garlic, chopped cilantro, lemon juice, and some salt, Process it in a blender. Make sure that it is blended well. Pulse for about five times. Transfer in a container.
For the chicken, place the bread in a food processor. Pulse it ten times. Wait for it to turn into crumbs amounting to about one and a half cups. Arrange the crumbs on top of a baking sheet. Bake at 350 degrees for around three minutes. Let it cool completely.
Place the chicken breast halves between two heavy duty plastic wraps. Pound it until the thickness measure to one half inch. Use a meat mallet or a rolling pin to flatten the meat. Add salt, red pepper and cumin. Sprinkle and spread evenly over the chicken.
Whisk the egg. Place the bread crumbs in flat dish. Dip the chicken in the egg mixture then place it over the breadcrumbs. Cover each piece all over.
Heat some oil in a nonstick pan over medium heat. Put the chicken in it and let it cook for five minutes on each side. Flip it over to another side. Transfer it into a plate. Top the chicken with salsa and some grated cheese. Place some garnish such as lemon wedges if you want.
