Directions
1In a shallow bowl or pie plate, lightly whisk eggs; add milk, cinnamon, and vanilla. Whisk until well combined.
2Heat nonstick griddle over medium-low heat. Coat with nonstick cooking spray.
3Dip one slice of bread in the egg mixture until well coated on both sides, allowing excess to drip into the bowl. Place on the griddle and cook about one minute on each side or until golden brown and the egg has set. Transfer to a plate and cover until ready to serve. Repeat with remaining slices, coating the griddle with cooking spray as needed. Keep cooked French toast warm.
4In a small bowl, mix the ricotta cheese and sugar.
5Assemble sandwiches: Spread 1/4 of the ricotta filling on a slice of French toast. Top with 1/4 of the berries. Top with another slice of French toast. Slice each sandwich in half and enjoy.
