Carrot Apple Muffins

Directions

1Preheat oven to 400°F.

2Lightly oil a muffin pan.

3In a large bowl, mix carrots, apples, maple syrup, yogurt and oil.

4In a separate bowl, combine flour, walnuts, sugar, baking powder, baking soda, nutmeg, cinnamon, ground ginger and salt.

5Fold the wet ingredients into the dry ingredients until just combined. Then fold in the raisins.

6Spoon the batter into the muffin pan.

7Bake for 20-25 minutes until golden, or until a toothpick comes out clean.
