This is really easy to make and delicious to eat. We usually make a double batch, since everyone has seconds and even thirds.

  • Yields: 8 - 10 Servings
The Best Homemade Potato Soup

Directions

1Combine broth, potatoes, onion, and spices in a pot and boil on medium heat until potatoes are tender.

2Smash a few of the potatoes to release their starch for thickening.

3Reduce heat and add cream cheese (best when cut into cubes)

4Stir often, until cream cheese is melted.

We usually use 1/8 teaspoon of white and red pepper for the kids.

4 cups of chicken broth

4 cups peeled and cubed potatoes

1/4 cup minced onions

1/4 teaspoon white pepper

1/4 teaspoon red pepper

1 package (8 ounces) cream cheese
